Here is the delicious recipe for the pie des demoiselles tatin, mother Poulard style.
Preparation: 15 minutes Cooking: 40 minutes
Ingredients for 4 to 6 people:
- 8 beautiful apples (Boskoop, Reine des reinettes, Royal Gala or Idared) previously peeled
- 100g butter
- 150g of sugar
- 15 cl of Calvados
- 400g of shortcrust pastry
- 20 cl of double cream
Mother Poulard's Tarte Tatin Recipe
> In a non-stick pan, melt the butter, add the sugar and lightly caramelize.
> Remove from the heat and add the apples cut into quarters.
> Reheat and caramelize the apples. Flambé them in calvados, then place them in a non-stick mold.
> Cover with the cooking caramel and place on top of the shortcrust pastry spread out in a circle of the same size.
Bake for 30 minutes at 180 °, thermostat 6.
> Take out of the oven and let cool a little, but the tart should remain lukewarm.
> Unmold onto a serving dish.
Serve this tart with a sauce boat of crème fraiche, each one can baste their tart with cream.
