Ingredients for 4 persons :

  • 80 g of shootsspinach or mesclun
  • 20 g semi-salted butter
  • 2 slices of raw ham
  • 1 tsp. cornstarch
  • 10 cl of milk
  • 25 cl of fresh cream 3 whole eggs
  • Salt, freshly ground pepper

  • 250g of flour
  • 125 g semi-salted butter
  • 1 egg yolk
  • 5 cl of water at room temperature

For the shortcrust pastry:

  • In a bowl (or on a work surface), sift the flour, dig a well and place the butter cut into pieces, the egg yolk, water, then salt.
  • Mix with your fingertips.
  • Let the dough rest for 1 hour in the fridge.

Preheat the oven to 180 ° C (th. 6).

  • Place the dough in a mold, prick the bottom with a fork.
  • Brown the shoots in a pan with the semi-salted butter for 1 minute. Reserve.
  • Cut the ham into thin strips and set aside.
  • In a ramekin, combine the cornstarch and milk.
